Vegetarian 3 bean chili

Vegetarian 3 bean chili

Ingredients
½ red bell pepper
½ Green Bell pepper
½ Orange Bell pepper
½ Yellow bell pepper
1 yellow sweet pepper
1 orange sweet pepper
1 red sweet pepper
½ onion
2 cloves garlic
1 can black beans
1 can red beans
1 can white beans
1 can vegetable broth
1 can tomato sauce
Add To taste:
Salt, pepper, cayenne red pepper, chili pepper, paprika, Italian seasoning, parsley

Directions
Drain and rinse beans
chop peppers, onion, and garlic
Put into crock pot
add broth, and tomato sauce and stir
Add seasonings to taste (I don’t measure my seasonings, just throw them in)

Top with Non-fat Greek yogurt and 2%Mexican cheese blend










Healthy Eggplant Parmesan


1 medium eggplant
4 egg whites
2 cups Italian breadcrumbs
1 can organic marinara
1 cup low fat mozzarella cheese
Pre-heat oven to 350

Cut eggplant into circles
Dip into egg whites
Dip into bread crumbs
Place onto a lined baking sheet

Bake at 350 for 15 minutes
Scoop 1 tablespoon of marinara onto each circle, and sprinkle with cheese bake for another 5-8 minutes and remove.

I served them with spinach tortellini and steamed green beans
